yesterday i tried broccoli soup. first time i made pureed soup. in the past i always skipped these recipes cuz i thought the blending part was too troublesome. well the broccoli soup didnt turn out too bad, so i decided to give mushroom soup a shot.
generally, these creamy soups are packed with fat/calories cuz of, well, cream. so i substituted cream for milk (buy one carton of milk get one carton free! expires on the 11th though!)
for once i didnt murder a recipe. this even has mum and dad's approvalmushroom soup must be pretty dummy-proof! and its got everything i love!
onions, garlic, more onions, mushrooms, mushrooms and even more mushrooms, and milk. with a potato thrown in, cooked in chicken broth and pureed into a thick slush of mushroomy goodness!
i cant imagine how much mushroom i just consumed. i used a little over 400grams of mushroom, that made for ~2.5 bowls of soup! i wish i had some baguette to go with it! well, soy 'baguette' wasnt too bad. it's like sourdough baguette.
well toasted bread + butter dunked in soup ranks pretty high up there too. more than demi-godly.
i am a happy camper.
next time im gonna save a few chunks of mushroom instead of blending the lot. MMMmmm chunky mushroom soup.. yummy.
i want to try pumpkin soup too. and just regular chicken soup. i have got this huge craving for drumsticks.
